“We getting close to opening, hopefully later this week,” Karris said.

The bakery is located in the former Quizno’s sandwich shop in Ogden Place, just west of the ever-popular 100 block of West Broadway.

“There is so much growth going on here,” Karris said.

“A spark of something special is happening,” Mathew added.

Mad Ox Bakery will offer breads, croissants, donuts and cupcakes, along with a wide assortment of cakes.

“We do 3-D cakes, sculptured cakes, all the way to wedding cakes,” Karris said. “We do it all.”

'Fantastic' Mad Ox Bakery has grand opening

Council Bluffs City Councilwoman Lynne Branigan started off with three words to describe the food at the new Mad Ox Bakery during a special event there Wednesday evening.

“This is fantastic,” she said. . . .

They and two dozen other civic leaders participated in the official ribbon-cutting and grand opening for owners Matthew and Karris Mattox.

The bakery, 215 W. Broadway, has actually been open for about three months. The public’s overwhelming response has kept them busy until the daily closing time, Matthew said. . . .
