Brad and Johanna Marr plan to open Baxter, which will serve pizza by the slice, sandwiches and salads in the former location of Ella's at 6113 Maple St.
"We love Benson," Brad Marr said, "and we want to continue to make it a great place to be."
Baxter is named after the grandfather of the Marr's business partner. The late Johnny Baxter opened his first car dealership in 1956 in Benson where the Waiting Room is now.
First of all, we would like to thank everyone for your support over the last few years. That being said, we have decided that it was time for Baxter's to consider its future. In doing so, we have decided to sell the restaurant and the last day that we will be open is Saturday October 31st. There will be a new restaurant opening soon in that space and we hope that you support it the same way that you supported us. Thanks again.
It is good to know that there is a restaurant in waiting...
Considering the |expletive| that Chipotle is taking and the revelation that tortillas are not exactly lo-carb, such that wraps are now seen as less healthy than sandwiches its probably a bad time to start up a burrito business. If you get a rep for so-so food, even worse.
Man, the comments here when it first opened were very unexcited haha. Glad to see Burrito Envy pull it off and succeed enough to warrant the second location.
