Yoshitomo Sushi - Benson
Mike'l Severe had David Utterback on the bottom line today. He is going to open a Sushi Restaurant in Benson in about 3 months. Didn't have many details other than he closed on the property yesterday and he said it will be good and affordable.
David Utterback also be at the Dandelion popup restaurant tomorrow in the chamber lot on 15th and Harney:

Before opening the thread I thought it was awful harsh of you to pass this kind of judgment before they even opened!
For the record NEBUGEATER does not equal BUGEATER !!!!!!!

“Right now, I'm working on opening up my own sushi restaurant in Omaha called Yoshitomo, which will have a special room in the back for my omakase dinners, so I will be able to cater to those who just want the basic rolls and those who want the chef’s table experience,” Chef David Utterback explains.

I had it as Yoshi Tomo, not as one word. And search didn't find Yoshi...

One of America’s best sushi restaurants is in Omaha. Yes, Omaha.

The Washington Post wrote:OMAHA — The contradiction is not lost on David Utterback.
The chef and owner behind three restaurants here has gone off on a tangent about sushi in America. Many counters in the United States, Utterback suggests, are content to mimic Tokyo-style sushi, as if the cuisine were a fixed object handed down from the masters, never to be touched. Utterback delivers his monologue near the finale of a 2o-course dinner at Ota, his high-end omakase counter that serves eight customers a night, max. For one final course, the chef hands diners what he jokingly calls “prairie tuna.” It’s a slice of wagyu strip loin, lightly torched, topped with sea urchin butter and golden osetra caviar.
“To me this bite perfectly symbolizes what sushi is supposed to be in America. Sushi is a regional food. It’s supposed to change — in construction, in taste, flavor, terroir and all the ingredients,” Utterback explains, his hair pulled back in a chonmage, the traditional Japanese topknot.

A great review! I always proudly brag about Omaha’s sushi scene to people, and this review clearly shows why.
