Best Bison Restaurant (78th & Dodge) - Closed

I just got confirmation that the Food Truck Best Bison is building a brick and mortar restaurant in the Duluth Trading area north of Dodge.

I’ve never tried them, but I pulled up their menu on Facebook. I will definitely go there!

They have a sign up now on the Dodge side of the building with an arrow. It still looks like they're working on the actually site.

Though informative, the sign on the front of their bay is the ugliest, busiest sign I may have ever seen. However, I intend to sample their product once they're open. :D

They should have added an asterisk with: "if you need more calories, order two." in small print at the bottom.
He said "They are some big, ugly red brick buildings"
...and then they were gone.

Real bison burgers cooked properly are delish. Fast food joints often grill them to completion. This leads to nasty dry burgers. Hope this is not the case here.

I found job postings for both a Kitchen Supervisor and and Kitchen Manager. Maybe they spend so much on the sign they can't afford staff!

Interestingly, in the job posting they say: "With plans for expansion, this flagship location is sure to be the first of many more to come," We shall see.

We had lunch today at Best Bison. We were impressed, top to bottom. It appears they spent a good amount of money on the front end of the place, and we couldn't even see the kitchen area. The restaurant is well laid-out with a vestibule at the front door to help keep out cold air -- a necessary item for Nebraska wind that some similar places (think Smashburger) left out. Good move, Best Bison!

Ordering is via electronic kiosks. Theirs were well designed by someone who thought through how diners order. (I can't say the same about everyone's kiosks.) The manager hinted that a glitch in the kiosks was one thing that delayed their opening.

We were wondering if they overstaffed a bit, but perhaps that's a thing for any new restaurant. A number of different employees kept asking if they could help us -- perhaps that's because we appeared confused (we were not, we were simply taking our time). The manager (owner?) was also there, keeping watch over everything.

The noise level was oddly variable, and after paying attention, we figured it was a combination of a noisy ice machine and background music cycling, with patrons talking louder to keep above the ambient noise level. As older diners, we complain about noise levels at many places (and don't return to some because of it) but we realize some diners like that atmosphere.

Okay, to the food. We were completely happy with our bison burgers, fries, and beverages. Everything arrived exactly as we ordered it and at the proper temperatures. Our burgers were delicious and definitely were not beef, but did not taste all that unusual because of familiar toppings and very fresh buns. While chatting with us, the manager pointed out that bison from different ranches tend to taste different -- we wonder if other diners more knowledgeable of bison had asked about the flavor. There are a lot of non-burger options on the menu to try.

We will be back!

Last Thursday I was in the area and stopped and ate here around 6:00 PM Overall the experience was good and I will be back.

I liked the automated ordering boards. Easy to understand and use. YOu can order at the counter but if I followed correctly you can only pay cash there.

Had the Bison Bacon burger, reg fries, and a drink. Total was about $15. More than your typical burger but it was Bison and that will be more costly to state the obvious. Burger was a nice size and topping choices I made were fresh and plentiful.

Fries were OK but not write home about.

The place was busy. seemed like there was always someone ordering when I was there. some for takeout. I did a quck count as I was tossing my trash and walking out and I counted 29 people seated or ordering.... about 6:30

Somewhat surprisingly, Best Bison, a restaurant that would seem to focus on selling meat, now has a salad bar. I suppose it connects with those looking for healthy food choices.

We were there a couple of times and while the food is good, it’s pretty carb heavy in light of the dependence on sandwiches. Probably a good add as this let’s them move into the roasts. These are the best way to serve bison, but limit your sandwich choices.

The prices were somewhat higher than what I wanted to pay for what was essentially fast food, even if it was bison. Their chili was excellent though!

There no doubt could be a lot of reasons why a restaurant closes in this era. Certainly the location right in the heart of Omaha had to help their business prospects. But I am just guessing that probably 90% of the population is put off by the thought of eating buffalos. It’s just not something I seek out when I’m looking for a dining out experience.

Have you tried it. Very good lean meat.
I am guessing your 90% is way overstated, and it has more to do with cost and being readily available.

The Buffalo you are eating are not wild. They are raised for the market like cattle.

IT costs more but on occasion is worth it. The place I have been buying some Buffalo meat recently is at Elsworth Crossing. A great place to go to get Nebraska-raised farm products. There are a could of exceptions to the Nabrasa thing, but few and far between,
