That's huge for them and for Omaha to have those picks. Hopefully one of them can get the Beard.

James Beard Awards

Post by Globochem »

There will be no JBF winner from Nebraska this year. The finalists have been chosen and it's back to the usual suspects: Eatery 112, Niche, Bluestem. The important thing is to log into the James Beard website and vote for whom you think deserves a nod (you are supposed to have diner there) in the fall when the voting occurs. Those winners are the 20 semifinalists. The 5 finalists are chosen by JBF voters as well as the winner. This means the Omaha has to give the voters plenty of reason to come here!

I have no qualms with Bluestem in KC being in the group. They're in my top five, and I'd much rather go there four or five times than Alinea once.

Can't comment on Eatery 112 or Niche.

Yet.

The Omaha food scene is alive and well, despite multiple closings. It is always ever changing, and chef driven places help make a city (any city) worth visiting.

I looked at the finalist lists. All the Midwest winners were associated with restaurants either in Minneapolis or Milwaukee (Chicago has it’s own category). Minneapolis is an absolutely fabulous restaurant city. I’ve never eaten in Milwaukee, but it also sounds like a foodie town.
I have always been impressed with the local food scene in KC, and we are fortunate to be close enough to get there a couple of times each year (except for Covid times).

As the saying goes, if you're gonna call your restaurant yoshitomo, then you better back it up with good food.

Omaha chef ditched ‘familiar trappings’ in his restaurants.
Now he’s a James Beard Award finalist.

The first thing a person notices when spending time with chef David Utterback is that he’s constantly in motion. He rearranges the bottles behind the counter at his new six-seat, high-end sushi counter, Ota, which sits next to his wildly popular Omaha sushi restaurant, Yoshitomo. He stacks and re-stacks boxes of ingredients. He paces. He tears open and sifts several bags of flour that he’s planning to use for a new dish, his version of tempura, something he’s hoping to add to the chefs tasting menu he’s become known for.

The movement is the same when he’s preparing for a night of service or running the sushi counter at Yoshitomo. And it’s appropriate, because Utterback’s career as a chef has also been one of constant movement – building his knowledge of the best sushi, mastering it, then breaking those rules and starting all over again.

Customers line the sushi counter at Yoshitomo in Omaha’s Benson neighborhood during a private dinner in 2019. Despite dropping some of the familiar elements of a traditional American sushi restaurant, including the neon green blobs of wasabi, Yoshitomo has proven wildly popular. Tim Nicholson from The Boiler Room named as a finalist for James Beard Award

A chef from an Omaha restaurant has been named as a finalist for a major award in the culinary industry. Tim Nicholson of The Boiler Room is a nominee for Best Chef: Midwest as part of the 2024 James Beard Awards. The finalists were announced Wednesday. The awards, which started in 1990, recognize "exceptional talent in the culinary and food media industries, as well as a demonstrated commitment to racial and gender equity, community, sustainability, and a culture where all can thrive."

Yoshitomo, which was named as a semifinalist for the Outstanding Restaurant category, was not nominated. In 2023, David Utterback from Yoshitomo was nominated for Best Chef: Midwest, which includes Nebraska, Iowa, Kansas, Minnesota, Missouri, North Dakota, South Dakota and Wisconsin.

The winners will be celebrated at a ceremony in Chicago on June 10.

Boiler Room's Tim Nicholson up for Best Midwest Chef

You'll see a plaque celebrating head chef Tim Nicholson when you walk into the Boiler Room on 11th and Jackon. He was a 2019 semifinalist for the James Beard Award. Now, for the first time, he's one of five finalists. "I had a message from one of my good friends and it said, dude, you're a finalist! I was like, no way," Nicholson said. His passion for culinary arts began when he took a food class in high school. It was something he and his friends did as a joke, but it led to a serious career. He worked as a fish fry chef while studying culinary arts at Metro Community College. Then, started at the boiler room as sous chef in 2009. There he met mentors like previous head chef, Paul Kulik. He says it's surreal knowing he's up for best chef in the Midwest.

"The caliber of chefs that your name is next to really kind of puts it into perspective that you know, maybe we are doing something pretty amazing here," Nicholson said. Nicholson and his family celebrated Wednesday night, with champagne and oysters. "This whole past three days has been kind of a whirlwind and a lot to take in and accept. But it's been amazing, so I really just thank everyone," Nicholson said. He'd like to say a special thank you to his wife, family, friends and Boiler Room owner, Vera Mercer. He'll find out if he wins on June 10th, which would make it the first time an Omaha chef has won. For now, he's savoring the moment. "I'm just excited for the future. We'll see what happens in June, but until then we're just going to enjoy it," Nicholson said.
