Located at 129th & Maple in Eagle Run Square. They serve "Traditional Mexican flavors with a modern culinary touch." Opened in 2020.

That is very sad news. The food was excellent, and they have one of the best patios in Omaha for dining. It has the closest resemblance (both in atmosphere as well as their menu) of all the Mexican restaurants in Omaha to the newer Mexican cuisine restaurants we frequent in Mexico.

I did hear (rumor alert!) that they're getting a new chef and rebranding and a new restaurant will reopen in the existing space and most of the staff will be keeping their jobs. I presume the ownership will also change.

Copal has moved their last day of being open to Nov 23. It had been Nov 30

Management stated on social media that their chef would be helping to create a new restaurant, not Mexican, at the same location.
