Smoke Some Meat!!!!
So I have your assurnace that it is OK to run my smoker starting about 5 PM on Friday for 16 + hours? ;)
For the record NEBUGEATER does not equal BUGEATER !!!!!!!

But yeah, I'd be surprised if you have anything to worry about weather-wise during that time frame.

For this amount, I have the larger electric master built (for heat) with an external smoke generator. It has five shelves in it, and I can get 10 bone-in butts in it with ease, if needed, and have a couple of smaller ones, I can fit in a couple more.Louie wrote: Wed May 15, 2024 9:59 amDanggggggg. I will try and snap a couple of photos of the process and share them this time.
FYI I have security cameras that cover this area so no overnight sampling between my checks!!!!

16 Hr in the smoker and 45 Lb 7 Oz of finished pulled pork vac sealed and in the freezer for a few weeks down the road. I got about a 55% yield, and that is about right. Smoked to an internal temp of 195 Deg. I used Hickory wood and seasoned it in advance with Hickman Fat Boys Sweet Rub. Formerly JB Fatboys. Local company.
