At the family-owned and operated Mootz, pizza has a new home in Countryside


The first person you’re likely to see when you walk into the new brick-and-mortar location of Mootz Pizza, on the back edge of Countryside Village, is Brent Adkisson, Mootz pizza chef Collin Adkisson’s dad, working at the cash register. Look around and you’ll also probably spot Ruth Adkisson, his mother, prepping in the back of the kitchen, or clearing tables in the dining room. Collin Adkisson himself is right there, too, preparing the pop-up turned food truck turned dining room’s signature thin crust, wood fired pies. To say Mootz, an opening I’ve been anticipating since 2021, is a family affair is kind of an understatement. It’s unusual these days to walk into a restaurant and see an entire household hard at work to deliver an experience; the good news is, Collin and his family know what’s what, and Mootz, I am happy to say, does not disappoint.

Finally made it to Mootz and it was great. Can't wait to go back again.

I tried this place for the first time today. Good pizza! Though, for $5/slice I'd expect a bigger slice. They do the "cup and crisp" pepperoni thing. Crust was excellent (they actually used some salt in the dough - others should learn this).

I didn't love it when it was at the food truck-too much crust I thought-but I really think it's pretty great now. I do agree that the whole pie is the way to go from a value perspective...if I'm really hungry I can almost eat a whole one but otherwise I usually have a slice left.

It's a solid B plus to A minus pizza and the crew that works there is cool.

Fun fact: Cupped pepperoni primarily gets its shape from the collagen casing, which contracts during cooking, causing the pepperoni to curl.

It's so cost-prohibitive to run a shop these days. I don't understand how places can survive, and not just food service.

While I've only eaten there once, the pizza was very good. If pizza places are closing, you really know that the economy isn't doing well. Pizza is supposed to be once of the most profitable food businesses.

I never went - we don't make it over that way, and we have several pizza places out west. Not to say theirs isn't better than others, but just haven't stopped in.

Pizza is profitable, but it sounds like some were saying their prices were high. That's one thing with pizza - we like Godfather's and La Casa... but Godfather's will run us $40-$50 for a couple of pizzas and La Casa will likely cost about $60-$75 for what we'd want. This past weekend we had some neighbors over and I was able to get four pizzas from Domino's for about $30. Yeah, it's not amazing, but it's not bad (IMO) and kids like it, too. When we have Pizza Hut, Papa John's, Marco's, and several other options for "cheap pizza", when we get the good stuff, we are going to stick to something we know out here.

Damn, I wish they gave more of a notice. I'd love to hit it up one more time, but with 6 days left I am guessing every day is going to be super busy.

It's tasty pizza and it's sad they're closing-up.

The goodbye post says two different names from the chef who I thought owned it. Must have been funded by his parents. Still interesting he didn't even write his own thank you good bye note. mom and dad funded it and wrote the goodbye post for him. 🫣

I was there once I think a few years ago. Thought it was pretty good. Given its Location on the backside of the shopping center might have had something to do with it, You don’t notice it at all from Pacific street, sometimes it helps if people can see the restaurant when driving down a road.

This is the real story here. The kids bailed on the restaurant some time ago.

I would wonder if they're trying to sell the business and doing a little performative updates.

I also wonder what the building owners think of it closing with that giant pizza oven taking up the space that it does.

I heard rumors they sold all the equipment to a new owner, who plans on opening a new pizza place in Countryside, but I can't get anything to confirm that.

Sold everything in the house on Facebook Marketplace so we could move into an apartment and start again.Then I went back to making pizza. Pizza Hut, Little Caesars, even delivery driving.While I was gone, my parents kept the restaurant running another 6 months. They changed the menu, made new social media accounts, and even bought the machines I always needed to standardize processes. Eventually, my business email got deleted, along with years of work I put into Mootz.I never made a post saying Mootz was closing. From the outside, it just looked like I disappeared.That’s when I tried to get it back. I tried to sublease the space and reopen it myself. The landlord was willing. They weren’t.The one thing I could still go after was the food truck. Even though my name was on the title, I took out a loan and bought it back.I don’t really like putting all this out there. I’ve tried to keep quiet and just move forward. But people have been telling me things they’ve heard, so I wanted to say it myself.Mootz has always been successful , I didn’t abandon it or run away.We’re looking at a new restaurant right now.The first Mootz restaurant wasn’t the end.

I think we're obviously missing the "other half" of the story. I can't imagine that the parents would want to intentionally tank the business that they put up the capital for.

I never made it to Mootz I have had the pleasure of attending the brother's (other son to the parent's) private dining experience that was amazing.

Likely the case, but there are at least two sides to every story and almost always three sides if you include the unfiltered truth.
For the record  NEBUGEATER does not equal BUGEATER    !!!!!!!
