Someone called in to Grow Omaha a few weeks ago and asked the same question. He lived right by there and says every once and a while there will be a truck or two out back.[email protected] wrote: Mon May 03, 2021 11:41 am Any word on when Primo's will open at this location? I also noticed a liquor license notice posted on the front window. Not sure how long that's been there.
I see people ask them on their Facebook page, but they do not respond.

There was a post on their Facebook page from March 10 saying they were going to start hiring staff. They wanted to train them in CB first, before moving to Omaha.

They're just awaiting final health department certifications. We spoke to the folks at their CB location last week, and that's what they said.

How exactly does that work? Get hired in March, but it's now September and aside from maybe some training and onboarding you haven't gotten paid a single hour in 6 months? "You're hired! Now, sit by the phone and we'll call you sometime in the next year and let you know when you can begin working." Sorry. Pure ignorance here as I've never been hired at a newly opening restaurant.nativeomahan wrote: Wed Sep 15, 2021 6:15 pm They started hiring staff in March. This is mid September. That says a lot.

The impression I had is that new employees would work at the Council Bluffs location so they could train, until the Omaha location opened.ChadJK wrote: Thu Sep 16, 2021 9:23 amHow exactly does that work? So, their CB location has twice the staff it needs right now as it's utilizing two restaurants' worth of employees? So, everyone is getting half the hours they normally would? Like I said, there's something I really just don't get about how all of that works.Padre wrote: Thu Sep 16, 2021 12:48 pm The impression I had is that new employees would work at the Council Bluffs location so they could train, until the Omaha location opened.

Considering how hard it is to get staff right now, they might need them in CB! I have to admit I don’t know how it works either, I’m only passing on what I heard.ChadJK wrote: Fri Sep 17, 2021 9:10 amSo, their CB location has twice the staff it needs right now as it's utilizing two restaurants' worth of employees? They made a super quick Facebook video post today:
Looks about done. Built a bar in that raised area in the back. Someone made a comment on the video that says October Opening, not sure if they are connected to the restaurant or not.

Considering how many open positions I know we have at work, I'm not surprised they are struggling to open. It's brutal at the moment. As many as we hire, we also lose.

Can’t wait to enjoy their large outdoor seating area now that they have effectively eliminated the mosquito problem by waiting to winter 2021 (2022?) to open.

Been to the one in CB several times and love their food. Puffy tacos a la Cali Taco or Jonesey. Haven't eaten at the new location yet.

I got their taco salad, and I thought it was a pretty good size.

No “Mexican” restaurant in México serves taco salads. I think the Chili’s does, for people who come to México but who are scared of eating actual Mexican food.

No, you can get flour tortillas, which are less apt to fall apart when moist, as compared with corn tortillas. Most tacos I eat in México have corn tortillas, but they give you two per taco in order to hold together better.

I read on article a while back about whether flour tortillas are authentic Mexican. It seems they are. Especially in the northern states of Sonora, Chihuahua and Coahuila. So, Mexican food elitists probably shouldn't be hating on flour tortillas for not being authentic. Though, honestly, I obsess less over what is "authentic" and more over what just plain tastes good.

Breakfast affordably hits the spot
reviewed by SARAH BAKER HANSEN
I give a lot of recommendations for restaurants, and people often ask me where they should eat. But this week, I’m writing about a recommendation someone gave me — well, kind of. When I saw my friend Mike’l Severe tweeting photos of what looked like an amazing Mexican breakfast recently, I instantly added Primo’s Modern Mexican to my “try it” list. A few weeks later, here we are, and after two visits to Primo’s, one for breakfast and a second for dinner, I can agree with Mike’l that breakfast is where this spot excels.
Sometimes, it’s the surprisingly simple and affordable that impresses. At Primo’s, that’s a good way to start the day.

We went for dinner once in summer 2022.
Once.
The outdoor patio is nice enough. The indoors is a glorified Keno Parlor.
The chips and salsa were very good. As I recall so were the margaritas.
Everything else we tried was really, really disappointing. The restaurant calls itself “modern Mexican.” The owners clearly have no idea what they are talking about,
